Ok so the sun hasn’t exactly been a regular occurrence just yet, we’ve been teased with sneaky peaks so far…but it is definitely warmer, and proper muggy!
So I thought I’d send out a ridiculously refreshing smoothie recipe.
This one is amazing – jam-packed full of goodies without any of the nasties you’ll find in your supermarket version.
Pineapple & Coconut Smoothie
Serves 1
- 200ml coconut water
- 1 small ripe banana
- 50g fresh pineapple, cut into cubes
- tsp ground ginger
- 1 tsp vanilla extract
Method
- Place the ingredients in a blender and pulse until creamy.
- Add a splash more coconut water if required, to achieve the desired consistency.
- Consume immediately.
